One-pot pizza mac
Is it crustless pizza with macaroni? Or macaroni topped with a pizza? I don’t even know, but I do know you’re going to love it! I’ve taken the flavours of classic pizza sauce to make a rich tomato sauce for macaroni. The crowning glory (literally!) is stretchy melted mozzarella blanketing the top, dotted with sliced salami. Plonk that pot in the middle of the table, spoon out big, stringy helpings and watch eyes and smiles grow wide!
PS: Don’t shortcut sauteing the salami properly at the beginning – it will ooze tasty red oil that flavours the whole dish.
Ingredients
1 tbsp extra virgin olive oil
125g salami slices, chopped into 1cm squares (see note)
1 brown onion, finely chopped
1 red capsicum, deseeded and chopped into 1cm squares
2 garlic cloves, finely minced
1 tsp dried oregano
1 tsp dried basil
2 cups (500ml) low-salt beef stock
800g can crushed tomatoes
1 tsp cooking salt
1⁄2 tsp black pepper
21⁄2 cups (250g) elbow macaroni (or other small pasta)
Pizza topping
2 tightly packed cups (200g) grated mozzarella
50g pepperoni slices (or more chopped salami)
12 kalamata olives, pitted (or olive slices)
Method
1. Preheat the oven grill to high with the shelf 25cm from the heat source.
2. Heat the oil in a large ovenproof pot over high heat. Cook the salami for 3 minutes
or until the edges are tinged with light gold. Add the onion, capsicum, garlic,
oregano and basil. Stir for 2 minutes or until the onion is translucent.
3. Add the stock, tomatoes, salt and pepper. Stir, bring to a simmer, then add the
pasta. Give it another stir and once it comes back up to a simmer, lower the heat
slightly to medium-high so it’s bubbling energetically but not boiling rapidly. Cook for
10 minutes, stirring every minute, so the base doesn’t catch, until the macaroni is
almost cooked. The mixture should still be quite liquid at this stage.
4. Turn the stove off and wait for the bubbles to subside. Smooth the surface. Sprinkle
with the cheese, then top with the pepperoni and olives.
5. Place under the oven grill for 5 minutes, until the cheese is melted and the

Ingredients
SHORTCRUST PASTRY
185g (1¼ cups) plain flour
½ tsp cooking salt
100g unsalted butter, cold, cubed
2 ½ tbsp ice-cold water (plus more if required)ASPARAGUS AND BACON FILLING
2 bunches asparagus (about 15 stalks), ends trimmed
200g streaky bacon
15g unsalted butter
½ brown onion, finely chopped
1 garlic clove, finely chopped
3 large eggs
150ml (⅔ cup) full-cream milk
150ml (⅔ cup) thickened cream
pinch of cooking salt and black pepper
100g (1 cup) shredded gruyere (substitute cheddar or colby)Method
Step 1
To make the shortcrust pastry, pulse the flour, salt and butter in a food processor 10 times or until it looks like breadcrumbs. With the motor running on low, pour the
water into the tube feeder, then blitz on high for 30 seconds or until it turns into a
ball of dough (see note). Pat the dough into a 2cm thick disc, wrap it in cling wrap
and refrigerate for 1 hour.Step 2
Prepare the asparagus by setting aside 7 whole stalks and chopping the rest into
5mm pieces. Cut 50g of the bacon into 2cm x 1cm pieces and chop the remaining
150g into 1cm dice.Step 3
Preheat the oven to 180C fan-forced (200C conventional).Step 4
To make the filling, melt the butter in a non-stick frying pan over medium-high heat. Cook the 2cm bacon pieces until golden then remove to a plate lined with paper towels using a slotted spoon. Set aside. In the same pan, cook the onion, garlic and remaining bacon for 2 minutes, until the onion softens. Add the chopped asparagus and cook for 2 more minutes, stirring. Transfer the mixture to a bowl lined with paper towels and leave to cool.Step 5
To make the custard mixture, place the eggs, milk and cream in a large bowl and
whisk to combine. Season with salt and pepper. Set aside.Step 6
To cook the pastry case, remove the dough from the fridge and roll into a 27cm
round on a lightly floured work surface. Carefully fit it into a 23cm quiche pan without stretching or pulling the pastry (see note). Trim away any overhanging pastry.Step 7
Prick the base of the pastry lightly 30 times with a fork. Cover with 2 large pieces of baking paper arranged in an X and fill with baking beads, raw chickpeas or dry
beans.Step 8
Bake for 20 minutes, then remove from the oven. Reduce oven temperature to 160C fan-forced (180C conventional) and carefully remove the paper and baking beads using the overhanging paper, then bake the pastry for another 10 minutes until light golden.Step 9
Remove the pastry case from the oven and turn the oven back up to 180C fan-
forced (200C conventional). Place the prepared pastry case and tin on a baking tray.Step 10
To assemble and bake, scatter the bacon and asparagus filling evenly across the
pastry base, then top with cheese. Carefully pour in the custard mixture without
dislodging the asparagus and bacon mixture and place the whole asparagus stalks on top. Scatter on the larger pieces of bacon.Step 11
Bake for 35-40 minutes until the top is light golden. The centre should still be slightly jiggly. Remove from the oven and rest the quiche for 10 minutes before removing from the pan. Cut into wedges and serve.Notes
If the dough is not forming a ball in the food processor, add a little extra water, half a tablespoon at a time.
The trick to minimising crust shrinkage is to avoid stretching the dough when fitting it into the quiche tin. If you stretch it, it will shrink back when cooked. Weighing it down with beads and blind baking also helps.See omnystudio.com/listener for privacy information.

Mike speaks with Tim Blair, columnist for the Daily Telegraph, about his recent article criticising "doomy" teachers, academics, politicians, and the media for instilling climate anxiety in Australian schoolchildren with apocalyptic predictions that never come true—and for never apologizing when they don’t.
Tim recounts that about two decades ago, his friend’s young daughter was distressed after a climate talk at her Sydney school. A visiting academic warned students they might see their suburb of Hornsby flooded due to rising seas.
Despite Hornsby being 20 km inland and 190m above sea level, the girl was terrified for hours, fearing for her home and pets.
Many Australian children continue to experience similar climate anxiety due to alarming messages from educators, academics, politicians, and the media.

INGREDIENTS
1 PACKET DONNA HAY WHOLESOME BANANA BREAD CAKE MIX
1½ CUPS MASHED RIPE BANANAS (ABOUT 4 BANANAS)
⅔ CUP (160ML) LIGHT-FLAVOURED EXTRA VIRGIN OLIVE OIL
¼ CUP (60ML) MILK
2 EGGS
1 CUP (125G) FROZEN RASPBERRIES
⅓ CUP (25G) SHREDDED COCONUT
½ CUP (60G) FRESH OR FROZEN RASPBERRIES, EXTRAMETHOD
1. Following the packet mix instructions. Preheat oven to 160°C (325°F). Line a
21cm x 10cm loaf tin with non-stick baking paper.
2. Placed the mashed bananas, oil, milk, eggs and banana bread mix in a large
bowl and mix to combine. Add the raspberries and coconut and mix to
combine. Pour mixture into prepared tin and top with extra raspberries.
3. Bake for 1 hour 20 minutes or until cooked when tested with a skewer.
4. Allow to cool in the tin for 10 minutes before turning out onto a wire rack to

Halloween’s biggest scare might be kids' sugar consumption, with over 70% of Australian children exceeding recommended daily sugar limits, impacting their oral health.
Dentists caution that while occasional sweets are fine, frequent sugar exposure leads to decay. Sugary drinks are also an issue, with nearly half of boys aged 2-17 drinking them weekly, consuming nearly twice as much as girls.
With 33,000 annual dental-related hospital admissions for kids under 14, preventative care—such as brushing twice daily, limiting sugar to 24g per day, and regular dental checkups—is essential.
Clinton speaks with Dr Chris Sanzaro, Australian Dental Association Vice President, who suggests giving kids fewer lollies and more fruit such as mandarins would be a much healthier option.

Australians report the highest stress levels in APAC, with an average of 12 stress episodes per week, according to ADP's People at Work 2024 Report.
Over half (57%) believe stress negatively affects their job performance. Despite growing awareness around workplace mental health, especially during World Mental Health Month 2024, many workplaces struggle to support their employees adequately, leading to productivity losses and mental health concerns.
SafeWork NSW warns that rising stress impacts worker health, resulting in absenteeism and turnover.
The Black Dog Institute cites work pressure, harassment, and workplace violence as top stress factors, while the WHO notes that good well-being management can boost performance by over 2.5 times.
Judy Barnett, Operations Director at ADP Australia, tells Clinton, "while many Australian businesses continue to prioritise the mental well-being of their employees, our data shows that there is still room for improvement."
