We do this by raising awareness and providing education to founders, investors, NGOs and governments worldwide. We are committed to supporting UNSDG 4 – Quality Education and UNSDG 5 – Gender Equality.

David’s second book, Funded Female Founders was published in June 2022 and is also an Amazon #1 bestseller.

His TEDx talk “The Fight for Fairer Funding” has over 3 million views.

    David's 3 mindset messages:

We are spiritual beings having a human experience As Viktor Frankl said, between stimulus and response there is a space and time in which we are free to choose our response Our mindset and our thoughts create the world that we experience.

    Food

David wanted to be surprised. He said: "Surprise me! I love food and eat anything but liver."

It is not the first time that my guest wanted to be surprised and usually that poses a bigger challenge because there are a plethora of choices. To narrow down I tune in to my intuition and follow it's lead when making a choice.

So, I was browsing for various recipes, and I came up to lamb kotlet. It felt right! I really wanted to eat that dish myself and I imagined it would taste fresh, flavoursome, and be full of nutritional goodness. I decided to serve these kotlets with pitta bread, red cabbage slaw made with vinegar and fresh herbs alongside Japanese picked tomatoes that I shared in Episode 1.

This particular recipe of kotlets is Persian, but I often change my recipes to add more colours or flavours. So I merged Persian & Moroccan recipes, by adding mint and coriander to the lamb.

Azania Stewart, a towering presence in British basketball, brings her exceptional skill and charisma to the court.

With a career spanning professional leagues across Europe, Australia as well the 2012 Olympic Games, Azania's prowess as a centre has earned her accolades and admiration worldwide.

Off the court, she is a passionate advocate for women's sports empowerment and youth development, inspiring the next generation of athletes to reach for their dreams.

Life is short, spend it with tall & beautiful people ;-) As you can see from photos, I am no longer an average height, but rather short! ;-))

    Azania's 3 mindset messages:

Sharing stories and life experiences are key to life The power of knowing your strengths and bringing them to the table Connect the food and the journey.

    Food

Azania picked such a fun dish: tacos with guacamole chips and a margarita cocktail on the side.

Tacos offer endless possibilities, so I wanted to make something a bit special.

I decided on two kinds of beef tacos, also known as Birria tacos. Traditionally, they're made with meat that's slowly braised in a flavourful chilli sauce (I slow cooked the meat for over 5 hours the night before). Since the sauce can be quite spicy, I chose to tone it down and skipped a few of the hotter chilies in the recipe.

    VIDEO UPDATE:

Filming Mindset Kitchen is always a rewarding experience, filled with valuable lessons. However, despite my best efforts, a few unexpected technical challenges slipped through this time. My initial reaction was disappointment, but I quickly reminded myself not to dwell on it for too long.

I had an amazing time filming with Vicky, but unfortunately, things didn’t go as planned. My guest camera stopped recording within the first five minutes, and the main camera stayed out of focus throughout the episode. After investigating the issue and discussing it with my video editor, we concluded that releasing poor-quality footage wasn't the right choice.

Thankfully, the audio was perfect! So, while I couldn't release the video, the episode is now available as an audio version. I’m grateful I could still capture Vicky’s inspiring mindset insights, and I’m excited for you to hear them.

    Vicky's 3 mindset messages:

The behaviours ripple effect - how to not let other people's behaviours trigger you to change your behaviours Having a trusted circle of people to turn too - more so for the downtimes Open your mind when your with someone different - its a great way to learn.

    Food

Vicky is a big fan of seafood, so she trusted me to choose the dish. Being a seafood lover myself, I was thrilled to find the perfect recipe for her and even gave it a test run the night before.

After a good time researching, I decide to make pan seared code in white tomato basil sauce which you can find here

However, I felt the dish needed a little something extra to truly shine, so I decided to elevate it by adding fresh, succulent clams and serving it alongside toasted sourdough bread brushed with garlic. The combination was perfect, and the flavors came together beautifully. It turned out absolutely delicious, and from the look on Vicky’s face, I think she enjoyed it just as much as I did!

Recently, I prepared Gary's rib-eye steak, served with triple-cooked chips and a marinated Italian tomato salad (recipe here). Little did I know, Gary isn't a fan of tomatoes, but after finishing his meal, he surprised me by saying how much he enjoyed them. A win-win!

    Caroline’s 3 mindset messages:

Be the first You are uniquely valuable The conditions are never perfect

    The Food

I have to quote Caroline’s words for this part when I asked her what she would like me to cook for her, to explain why I chose this meal: ” I don’t think I’ve been asked that question in a VERY long time. My sincere answer is anything you want to! But if it’s more helpful for me to specify: I love Mediterranean food. Light, healthy and delicious. Fish would be delightful (altho I also eat meat) with something grainy or pulsey on the side perhaps.”

I love it when I get a challenge and get to experiment with new culinary recipes! I wanted to include all of the above to Caroline’s meal and I decide to make Japanese infused salmon fillet, with buckwheat, roasted vegetables, cucumber & coconut yoghurt salad on a side.

It was a very nourishing meal and Caroline enjoyed my creation.
