David's 3 mindset messages:
- We are spiritual beings having a human experience As Viktor Frankl said, between stimulus and response there is a space and time in which we are free to choose our response Our mindset and our thoughts create the world that we experience.
Food
David wanted to be surprised. He said: "Surprise me! I love food and eat anything but liver."
It is not the first time that my guest wanted to be surprised and usually that poses a bigger challenge because there are a plethora of choices. To narrow down I tune in to my intuition and follow it's lead when making a choice.
So, I was browsing for various recipes, and I came up to lamb kotlet. It felt right! I really wanted to eat that dish myself and I imagined it would taste fresh, flavoursome, and be full of nutritional goodness. I decided to serve these kotlets with pitta bread, red cabbage slaw made with vinegar and fresh herbs alongside Japanese picked tomatoes that I shared in Episode 1.
This particular recipe of kotlets is Persian, but I often change my recipes to add more colours or flavours. So I merged Persian & Moroccan recipes, by adding mint and coriander to the lamb.

Azania Stewart, a towering presence in British basketball, brings her exceptional skill and charisma to the court.

Life is short, spend it with tall & beautiful people ;-) As you can see from photos, I am no longer an average height, but rather short! ;-))
Azania's 3 mindset messages:
- Sharing stories and life experiences are key to life The power of knowing your strengths and bringing them to the table Connect the food and the journey.
Food
Azania picked such a fun dish: tacos with guacamole chips and a margarita cocktail on the side.
Tacos offer endless possibilities, so I wanted to make something a bit special.
I decided on two kinds of beef tacos, also known as Birria tacos. Traditionally, they're made with meat that's slowly braised in a flavourful chilli sauce (I slow cooked the meat for over 5 hours the night before). Since the sauce can be quite spicy, I chose to tone it down and skipped a few of the hotter chilies in the recipe.

VIDEO UPDATE:
Filming Mindset Kitchen is always a rewarding experience, filled with valuable lessons. However, despite my best efforts, a few unexpected technical challenges slipped through this time. My initial reaction was disappointment, but I quickly reminded myself not to dwell on it for too long.
I had an amazing time filming with Vicky, but unfortunately, things didn’t go as planned. My guest camera stopped recording within the first five minutes, and the main camera stayed out of focus throughout the episode. After investigating the issue and discussing it with my video editor, we concluded that releasing poor-quality footage wasn't the right choice.
Thankfully, the audio was perfect! So, while I couldn't release the video, the episode is now available as an audio version. I’m grateful I could still capture Vicky’s inspiring mindset insights, and I’m excited for you to hear them.
Vicky's 3 mindset messages:
- The behaviours ripple effect - how to not let other people's behaviours trigger you to change your behaviours Having a trusted circle of people to turn too - more so for the downtimes Open your mind when your with someone different - its a great way to learn.
Food
Vicky is a big fan of seafood, so she trusted me to choose the dish. Being a seafood lover myself, I was thrilled to find the perfect recipe for her and even gave it a test run the night before.
After a good time researching, I decide to make pan seared code in white tomato basil sauce which you can find here.
However, I felt the dish needed a little something extra to truly shine, so I decided to elevate it by adding fresh, succulent clams and serving it alongside toasted sourdough bread brushed with garlic. The combination was perfect, and the flavors came together beautifully. It turned out absolutely delicious, and from the look on Vicky’s face, I think she enjoyed it just as much as I did!

I have to quote Caroline’s words for this part when I asked her what she would like me to cook for her, to explain why I chose this meal: ” I don’t think I’ve been asked that question in a VERY long time. My sincere answer is anything you want to! But if it’s more helpful for me to specify: I love Mediterranean food. Light, healthy and delicious. Fish would be delightful (altho I also eat meat) with something grainy or pulsey on the side perhaps.”
I love it when I get a challenge and get to experiment with new culinary recipes! I wanted to include all of the above to Caroline’s meal and I decide to make Japanese infused salmon fillet, with buckwheat, roasted vegetables, cucumber & coconut yoghurt salad on a side.
It was a very nourishing meal and Caroline enjoyed my creation.

Tue, 03 Sep 2024 - 1h 01min - 19 - Episode 19 - Felicity Ashley: Mother. Marketer. Mariner. Motivator.
Mother. Marketer. Mariner. Motivator.
After over 20 years working as a blue-chip marketing leader, the business founder and mother of three rowed the Atlantic whilst unknowingly fighting cancer.
Drawing on her personal journeys of discovery, she now works with organisations and leaders facing transformational change. Supporting them to become more inclusive, dynamic, confident, adaptable and resilient. Her work focuses on how a positive mindset is key to success – overcoming challenges, tackling biases, creating winning teams, thriving through change, embracing opportunities, smashing goals. When life gives you lemons, it’s not just about making lemonade - it’s about using them to create something amazing.
In her 20+ years of leading marketing teams in some of the UK’s largest organisations, she successfully navigated and guided teams through a plethora of business and personal challenges, from organisational restructuring and transforming corporate culture, to supporting colleagues’ return to work, striking her own work/life balance with three young children and adjusting to extreme market disruption.
Inspired by renewed mobility following a hip replacement, she put her body and mind to the ultimate test by taking on ‘The World’s Toughest Row’ as part of ‘The Mothership’ crew – a 3,000 mile, unsupported row across the Atlantic Ocean and in completing it, joined the ranks of fewer than 250 women to have ever rowed an ocean. Her aim was to inspire women and children, and show them that ordinary people can do extraordinary things.
Just weeks after this incredible achievement she was diagnosed with stage three bowel cancer, a challenge which would once again put her mental and physical resilience to the test.
These two life-changing experiences have had a profound effect on Felicity, and have been a catalyst for change. After her successful cancer treatment, Felicity decided to pursue a different avenue of work and now shares her story, experiences and lessons learnt with organisations as an expert speaker to help them become more resilient, adapt to change and thrive.
Felicity's 3 mindset messages:
1. Embrace your super power 2. The power of reframing 3. Understanding your 'why'
The Food
Felicity have always loved food and cooking but as a busy mum of three, it is often a very functional process now and thinking about what to cook can be a chore! She asked if I could cook something that I love, which might help rekindle her own cooking inspiration!
I thought of delicious, full of flavour recipe and easy to make for everyone to enjoy: Chicken Francese.
Tue, 20 Aug 2024 - 53min - 18 - Episode 18 - Wynford Dore: Pioneering Brain Researcher
Wynford Dore is an entrepreneur that has disrupted several industries with his innovative approach to research. 20 years ago, Susie. his daughter, who had struggled badly in school, became depressed…. and attempted to take her own life. Mercifully she lived…. but it changed his life completely - he sold his companies to focus on education and “how we learn”. As part of this quest he founded an examination board “Education Development International plc” which operated in over 50 countries and sold that to the world’s largest education publisher - Pearson International plc in 2011. He bought a famous private school in Leamington Spa to investigate how education practices could be enhanced to suit each child’s individual needs. But most of his time is spent researching how the brain learns - and how to naturally increase our mental capacity. Working closely with neuroscientists he has discovered that recent breakthroughs show how it is now possible to change how his daughter’s brain was working…. And that by stimulating it with carefully chosen exercises brain plasticity can be increased - and so press the brain’s “reset button”. This process is now used to transform anxiety, solve attention issues, accelerate learning - and even overcome challenges like poor reading skills. His book “Stop Struggling in School” quickly became a best seller - and now, he’s helped many 10’s of 1000’s of adults and children. Susie is mercifully alive, but he continues to work closely with researchers with the belief that these powerful tools will soon reach the millions of people still struggling….whose lives could be transformed.
Wynford's 3 mindset messages:
- The generally held belief that we have to "put up with" whatever mental capacity we were born with is a myth. We CAN and SHOULD increase our mental capacity to the max so we A) perform at our best and B) feel "on top" of whatever life throws at us. Neuroplasticity can be enhanced at any age - which means that we can make important changes in our mental state and our cognitive faculties when we want. This takes away our limitations in a lasting, life changing way. Neuroscience explains many important things - including (for instance) why mindfulness, meditation and gratitude really change the brain. It also shows exciting things like.... why fun and contentment create totally different chemicals in the brain, some of which are addictive - and some that block the creation of the "contentment chemical". Very few realise this - and discovering it is life changing.
Wynford wanted a combination of meat and veg and whilst it sounds simple, I wanted him to have an explosion of flavours in his mouth.
So after a bit of research, I decided to make one of my favourite Japanese flavoured beef, rice and greens bowl. I love making various bowls, they are so nutritious and you can use variety of ingredients.
Wynford has really enjoyed the steak, and I was very pleased with how it turned out!

From Jenny's choice, it was clear that she loves eating healthy and nutritional food, so I was not surprised that she chose Thai cuisine. I decided to make Thai Red Chicken Curry.
It would be easy for me to use store bought Thai curry paste, which also usually tastes delicious. However, I take this as a challenge and opportunity to enhance my cooking skills. I have decided to make my own red Thai curry paste. It has taken me three different asian shops to find one particular ingredient and two tries to make it less spicy. On the day, the curry turned out absolutely delicious, as confirmed by Jenny.
As per usual, I used the recipe from this website.

Davi's 3 mindset messages:
- The ways that we frame an experience can shape our body's physical reactions. We can see these expectation effects in our responses to medicine, food, exercise Our thoughts about ageing can influence our longevity, through changes to our behaviour and our physiological stress response. People with positive views of old age live seven years longer on average We are far more loved than we think. This is a phenomenon called the "liking gap", which shows that we consistently underestimate the positive impressions that we make on other people. Overcoming the liking gap can help us forge deeper relationship
The Food
I must tell you, this was not an easy task. It is quite easy to make something out of the ingredient or cuisine that is given & chosen by the guest. But David did not give me any ingredient.
This was his wish for the dish: "I'd really love to be surprised! In the Expectation Effect, I describe how we should approach each meal as a form of celebration, since the pleasure that we take in our food can also help to leave us feeling more sated and it can even help our digestion. So perhaps you could pick your favourite meal that is both nutritious and which brings a sense of excitement and comfort?".
I had to think hard because quite frankly I wanted to impress David. Instead of trying to understand what would surprise David, which you would never know, I went for something that would surprise me. I have only seen a short video version of this dish so I had to gather ingredients and technique just from that little video. I practised once, and it turned out even better when I made it for David.
It is salmon wrapped in grated potatoes, served with a creamy sauce with dill & asparagus. If you wish a recipe, I would be more than happy to type it and share it with you, so please get in touch!
I can tell you David was pleasantly surprised and absolutely loved this dish!

Total Body Health, a holistic clinic, came about as a response to a number of health challenges Tony faced in middle age.
Depression, back pain (slipped disk, sciatica and arthritis), a prostate issue, stress, and problems sleeping. Tony was taking 24 pills a day!
After having injections in the back, Tony was told that the only option was to fuse his vertebrae with a small risk of paralysis, impotence and incontinence, or all three. He declined and said it didn't hurt that much (it did)!.
Tony came across Bioresonance, which not only enabled him to get rid of the pain, pills and 2 stone of excess weight, but baffled his prostate consultant who confirmed he did not have cancer and discharged him to his GP.
The advent of Covid brought the addition of Hyperbaric Oxygen Therapy and Red Light Therapy, both helpful with regard to Long Covid, Chronic Fatigue Syndrome, injuries, pain and post surgical recovery, even Alzheimer's.
Total Body Health clinic is on a mission to enable people to make the best choices for themselves to achieve optimum physical and mental health.
Tony's four key messages:- "The part can never be well unless the whole is well" Plato. Medical science has made such a tremendous progress that there is hardly a healthy human left" A.Huxley novel "Brave New World". Take the rough with the smooth, life is working for you. Look for the good in everything. The body and the world are always seeking balance. For every action, there is a reaction. There is more to life than meets the eye, question everything.
Tony wanted something light and healthy, so I decided to make Salmon salad with Asian ginger sesame dressing. The dressing is a star alongside salmon (or trout in this case). It has everything to tickle your taste buds and fill your tummy without many calories.
